Four day weekend recap

Our weekend started out on Friday. Daycare was closed, so we were all together for most of the weekend.  Thursday, my world started weighing heavy on my shoulders. I was going through some serious anxiety /depression I feel. I hadn't been out of the house alone in a while, the kids were sucking all of my last bit of energy, I was feeling grungy and just broken. I cried a lot. Real life problems. It's not always sunshine and rainbows. Anyways, tyler walked in and was like " you need to go somewhere. Get out and do something. " but then he immediately pulled a muscle in his neck and could barely move. So I went out Friday night instead with my friend Shannon. I needed to cleanse my soul and just talk and be myself and not the person everyone at home needed me to be. We ended up talking and eating for two hours. More dinners lately

Here's our last batch of new recipes we have tried : 1) I have made this one before , but I changed it this time to be turkey instead of ham, and less bad stuff in it. I think I would use cut up or shredded turkey breast instead of the gross deli meat next time. I can't remember being so offended by cold cuts, but I think since being off of them for two pregnancies, I am so used to finding them gross that I may not like deli meat anymore :(  2) this was really yummy. I served with some salad and rice. I would suggest following the instruction of making the chicken crispy and then making the sauce and putting on top. I worked hard to get our chicken perfectly crispy and then by cooking the cause in with it, it lost all crisp!! Lol 3) I won't ever make this again. Turns out I don't really like meat on top of potato. This recipe was also quite bland (sodium reduced everything has that effect though). Things I'm loving

1) the weather. When I get to stay inside unless necessary, I really don't mind the snow. Also I prefer it over -30 temps and freezing rain. Also, every time it snows, it is essentially money falling from the sky for doing nothing for Ty, which we appreciate :) 2) We sent off Valentine's buckets to daycare with Garett yesterday. She is waiting to celebrate Valentine's with the kids until the two littles that are out sick right now return :) We sent out provider a bucket of her own with a Starbucks gift card, and a gift certificate for a pedicure at a spa near her house that I love.  3) keira was getting the beginning of a cold , it hasn't amounted to much yet *knock on wood*. A few coughs through the day and a bit of a runny nose that i keep under control with the nose Frida. I have 8 days left of antibiotics, and G will be done his tomorrow morning.  4) Keira only took two naps yesterday instead of three. But those two naps were each well over 2 hours,...

Clean eats lately. Part deux

1) beef and broccoli. I really liked this recipe!! The beef melted in your mouth. Even Garett gobbled it up. Approved. I will keep this specific recipe in rotation. We ate it over long grain wild rice.  2) fresh tomato and ricotta whole wheat pasta.  This one I made last night. I used the linguine noodles instead. I couldn't really taste it since I am sick, but tyler ate everything of the leftovers and his plate in one sitting. He says it's arguably the best pasta he's ever eaten and to make it all the time lol. Again, g ate it and told me he liked my cooking. So big four year old approval win lol He's mine while it was cooking 3) last cabbage rolls.  This recipe SUCKS. We ate it , but I halved it (thank god) and we threw out the rest. I even altered it a bit. There was no saving this recipe.  I'll stick with my other one. 

Date day with Garett

One of the things on my "to do" list after I had Keira was to have a mommy/Son date day. I know he still gets plenty of attention , but other than errands, he doesn't get much. One in one time out in public with me. And it's different playing at home, than it is going out and finding common interests and relating to each other. He's my best bud, so I wanted to treat him to a day I knew we would both enjoy. I booked it so far in advance, that the night before I got so excited neither of us got any good sleep.  We started early on with a breakfast of his choosing. Toast with butter cut into special shapes, and a ton of cantaloupe. Soon enough he was done and we were out the door. It was a crummy snowy day, so I brushed off the car and away we went.  First stop was only a few blocks from the house so it worked out well. Clean eats lately

Tyler and I are making a conscious effort to be more aware of what we eat lately. We want to eat fresh and clean, and are doing so about 70% right now. We aim for 80 soon, but it's hard for him since he's out and about working a lot, and hard for me because I don't get much time to make food during the day, so if I don't make ahead, I usually just go without breakfast and lunch, which is AWFUL for you.  So that's my next issue to tackle.  Anyways, without further adieu , here are some recipes I have tried lately that are Tyler and Gman (and mommy) approved: 1) I served these over a salad. G was unsure, so picked away and ate half of one, so I made him some eggs instead for dinner. Afterwards he told me "remember those pucks? I kinda liked them!" Tyler and I loved them.  2) I have made this type of thing in a casserole. But this recipe was different, as it included egg as a binder and they cooked into muffin pan shapes. Tyler and I ate ou...
