Clean eats lately
Tyler and I are making a conscious effort to be more aware of what we eat lately. We want to eat fresh and clean, and are doing so about 70% right now. We aim for 80 soon, but it's hard for him since he's out and about working a lot, and hard for me because I don't get much time to make food during the day, so if I don't make ahead, I usually just go without breakfast and lunch, which is AWFUL for you. So that's my next issue to tackle.
Anyways, without further adieu , here are some recipes I have tried lately that are Tyler and Gman (and mommy) approved:
1) I served these over a salad. G was unsure, so picked away and ate half of one, so I made him some eggs instead for dinner. Afterwards he told me "remember those pucks? I kinda liked them!" Tyler and I loved them.
2) I have made this type of thing in a casserole. But this recipe was different, as it included egg as a binder and they cooked into muffin pan shapes. Tyler and I ate ours over arugula, but Garett gobbled his up just on its own. This is one of his favourites because he loves broccoli, cheese and rice, which he can't tell the difference between rice and quinoa (thank god)
3) these are everything !!! The sauce , the meatballs!! It's all so flavourful! Totally recommend. We are on a bed of long grain brown rice , with a side of a Greek style salad. My favourite of the bunch!

4) oh my god. The chicken in this was so tender, it was falling apart as I took it out. We ate this with some roasted potatoes and green beans. Garett is not a huge chicken fan usually. I have to just say "meat" or he usually won't eat it. But I chopped it up in rice for him, and he had no idea and actually told me he LIKED how the new rice tasted. So I told him I tricked him and put a ton of chicken in. Luckily, he has a a sense of humor and didn't throw up haha

Tonight I will be trying yet another new recipe. I love sampling, and building our arsenal of dinner ideas; adding to our favourites, taking out ones we aren't really sure of to replace with better ones!
