Clean eats lately. Part deux


1) beef and broccoli. I really liked this recipe!! The beef melted in your mouth. Even Garett gobbled it up. Approved. I will keep this specific recipe in rotation. We ate it over long grain wild rice. 


2) fresh tomato and ricotta whole wheat pasta. 
This one I made last night. I used the linguine noodles instead. I couldn't really taste it since I am sick, but tyler ate everything of the leftovers and his plate in one sitting. He says it's arguably the best pasta he's ever eaten and to make it all the time lol. Again, g ate it and told me he liked my cooking. So big four year old approval win lol

3) last cabbage rolls. 
This recipe SUCKS. We ate it , but I halved it (thank god) and we threw out the rest. I even altered it a bit. There was no saving this recipe.  I'll stick with my other one.

  1. That pasta looked really good, minus the ricotta (barf haha) but let me ask you, do you have an issue with cooking fresh tomatoes, my skins end up all gross, maybe that's whats suppose to happen!

    1. I used grape tomatoes, cut into quarters. Cook them not too long, just to heat through a bit. I find if you give them time to shrivel, they're yucky and bitter. The recipe called for s cup of ricotta on top, which is way too much. I mixed in about 1/3 cup. It's very mild, but it's too rich to put the full cup, I feel
