Boring week

Sorry for the lack of posts through the week. My life is pretty typical, though I am thinking of starting a dinner post a day. I have a ton of recipes I have been collecting to try and am working my way through them, so that will probably be what you are going to read about through the week, and if you don't like it then too bad! ;) 

Tonight I made a recipe I came across this morning on Pinterest that I immediately wanted to taste, so Garett and I got ready and headed to the grocery store to pick up the stuff I didn't have.

The pin said easy Pierogi Casserole--easy is an understatement --but holy time consuming. This is not a meal to be made in a hurry between cooking the pasta and making mashed potatoes, you also have to bake it for 35 mins when you're ready to dig in as soon as its assembled in the casserole dish Lol.

Anyways, here is a pic of it, and surprisingly mine looked just like this --usually things in lasagna form fall flat for me. Ty devoured half of the 11x13 pan, and I found it very filling (seriously carb heavy though  lol so that's prob why lol) 


Tomorrow we have a guy coming to pick up our old snow blower we sold since we bought a fancy new one :) And with Ty staying home this winter, he can wake up and plot the driveway and clean off my car for me, right?? Hahahah.  

In the evening, we are meeting with the babysitter Garett will be going to (well, as long as I like her and her references).  So I am pretty excited for that, actually. And she's just up the road like 5 mins out of my way, which is great! 

Ty came home early today and got all of our patio furniture put away for the winter :( it's such a sad thing when he does this--another summer over!

I have to make an appointment for the insurance people to come back and take my blood (or try too, again)...we are in a pretty elaborate game of phone tag at the moment LoL

Also need an appointment for us to go get our shots for Mexico and our prescriptions for Dukarol and the anti biotics in case we get travellers uneasy stomachs (jusssttttt in case!)  I got my swimsuits in the mail today and I love, love, LOVE them. We are putting our lists together of what to pack--with everything else going on, I don't want to forget anything!

Ty opened is November date day envelope which we are doing on the first weekend in November, so stay tuned for that recap.

Garett is having a bath under daddy's supervision and then we are going to cuddle and read a few stories :) (I love me some fresh cleaned baby--I could inhale that smell ALL day and night!!!!). 

Hope everyone had a good day back to work (for us Canadians anyways)! Garett enjoyed his day with mommy :)

  1. I love the perogie casserole - i made it for a potluck and loved it...but you are right, very time consuming but oh so delicious!!
